  • 0. Start by finely chopping the vegetables and letting them brown with a drizzle of extra virgin olive oil for 5 minutes.
  • 1. Then add the previously washed dried lentils (alternatively, you can use pre-cooked lentils – cooking times will decrease by about 20 minutes).
  • 2. Add the tomato puree and the stock cube (optional). Stir for 5 minutes.
  • 3. Fill the lentils with water until they reach the required level and cover with a lid. Cook for 40 minutes over very low heat, checking the water level occasionally.
  • 4. Add a pinch of salt and a drizzle of extra virgin olive oil. Serve the soup hot with two slices of bread.
