  • 0. Place the gelatine sheets in a bowl of cold water and leave them to soak for about 10 minutes, until softened.
  • 1. Pour the fresh cream, milk, and sugar into a small saucepan. Add the lemon verbena leaves and the vanilla bean, halved lengthwise (if using). Heat the mixture over medium heat, stirring occasionally, until it begins to simmer gently. It should not boil vigorously.
  • 2. Remove the saucepan from the heat and let it steep for about 15-20 minutes, allowing the lemon verbena to release its full aroma. Strain the mixture to remove the lemon verbena leaves and vanilla pod.
  • 3. The heated cream and milk extract the aromatic essential oils from lemon verbena. This infusion process gives the panna cotta a delicate lemon flavor.
  • 4. Return the strained mixture to the saucepan and heat it again, without boiling. Squeeze the gelatin sheets to remove excess water and add them to the hot mixture. Stir well until the gelatin is completely dissolved.
  • 5. The gelatin dissolved in the hot mixture acts as a thickening agent, giving panna cotta its characteristic smooth, creamy consistency.
  • 6. Pour the panna cotta into molds or dessert glasses. Let it cool at room temperature for about 30 minutes.
  • 7. Cover the molds with plastic wrap and place them in the refrigerator. Let them rest for at least 4 hours, or preferably overnight, until the panna cotta is completely firm.
  • 8. To unmold the panna cotta, briefly dip the molds in hot water and then invert them onto a dessert plate. Alternatively, serve the panna cotta directly into glasses. Garnish with a few fresh lemon verbena leaves or a drizzle of honey for an extra touch.
