Porri dolci e salsiccia saporita si fondono in un risotto cremoso, avvolto da un caldo abbraccio di brodo e parmigiano, perfetto per coccolarsi.
Ingredients
- Leek250 g
- Fresh sausage200 g
- Carnaroli rice200 g
- Parmigiano Reggiano DOP50 g
- Stracchino50 g
- Butter50 g
- Fine saltto taste
- Bouillon cubeto taste
- Parsleyto taste
- Black pepperto taste
Procedure
0. To make the leek and sausage risotto, start by cleaning the leeks, removing the top layer. You can also remove the top (green) part to use later for the broth.
1. Finely chop the leeks and set aside. Brown the sausage paste in a pan. Meanwhile, prepare the broth with water and stock cube. Add the leek trimmings for flavor.
2. Once the sausage is browned, add the leeks and a ladle of the cooking water. Cook over low heat with a lid on.
3. Now let's prepare the rice. In a deep pan, toast the rice with a pinch of salt.
4. After 2-3 minutes, begin cooking the rice by adding hot broth. Meanwhile, cut the butter and cheese into small pieces. Add them to a bowl and add the grated Parmesan cheese. Place in the freezer.
5. Continue cooking the rice, adding the broth as it is absorbed, stirring occasionally to release the starches.
6. Once the rice is cooked (about 20 minutes), add the sausage and leeks and, off the heat, stir in the chilled cheese and butter. Plate and serve hot.
