  • 0. Preheat the oven to 180°C and line a baking tray with baking paper.
  • 1. Separate the yolks from the whites into two separate bowls.
  • 2. Add the granulated sugar to the egg yolks and beat with an electric whisk until light and fluffy. If desired, add the grated lemon zest for a fresher flavor.
  • 3. In the second bowl, add a pinch of salt to the egg whites and beat them until stiff with an electric mixer. Once the egg whites are well-beaten, gently fold in the powdered sugar, continuing to beat.
  • 4. Gently fold the whipped egg whites into the egg yolk and sugar mixture using a spatula, stirring from the bottom up so as not to deflate the mixture.
  • 5. Sift the flour and gently fold it into the mixture, always stirring from the bottom up.
  • 6. Transfer the mixture to a piping bag with a plain tip. Pipe sticks about 10 cm long onto the prepared baking sheet. Leave a little space between each cookie, as they will expand slightly during baking.
  • 7. Dust the ladyfingers with icing sugar and bake for 10-12 minutes, until lightly golden and slightly crispy on the outside.
  • 8. Remove the ladyfingers from the oven and let them cool completely on a wire rack before using or storing them.
