I savoiardi sono biscotti leggeri e soffici, di forma allungata, con una superficie leggermente croccante e ricoperta di zucchero. Sono spesso utilizzati in dolci al cucchiaio come il tiramisù.
Ingredients
- Type 00 flour100 g
- Granulated sugar75 g
- Powdered sugar30 g
- Eggs3 u (180 g)
- Fine saltto taste
- Lemon zestto taste
Procedure
0. Preheat the oven to 180°C and line a baking tray with baking paper.
1. Separate the yolks from the whites into two separate bowls.
2. Add the granulated sugar to the egg yolks and beat with an electric whisk until light and fluffy. If desired, add the grated lemon zest for a fresher flavor.
3. In the second bowl, add a pinch of salt to the egg whites and beat them until stiff with an electric mixer. Once the egg whites are well-beaten, gently fold in the powdered sugar, continuing to beat.
4. Gently fold the whipped egg whites into the egg yolk and sugar mixture using a spatula, stirring from the bottom up so as not to deflate the mixture.
5. Sift the flour and gently fold it into the mixture, always stirring from the bottom up.
6. Transfer the mixture to a piping bag with a plain tip. Pipe sticks about 10 cm long onto the prepared baking sheet. Leave a little space between each cookie, as they will expand slightly during baking.
7. Dust the ladyfingers with icing sugar and bake for 10-12 minutes, until lightly golden and slightly crispy on the outside.
8. Remove the ladyfingers from the oven and let them cool completely on a wire rack before using or storing them.
