  • 0. To prepare the baci di dama, start with the shortcrust pastry. In a bowl, vigorously mix the softened butter and sugar. Add the almond flour and mix well.
  • 1. Pour the egg whites into a bowl, add the salt to dissolve. Pour everything into the batter. Once the fat is well combined, add the sifted flour.
  • 2. Once the flour has been absorbed, transfer the dough to a lightly floured surface. Sprinkle a light layer of flour on top and bring it together without kneading. Wrap the dough in plastic wrap and refrigerate for 2-3 hours.
  • 3. Once the dough has risen, transfer it to a lightly floured surface and roll it out until it is about 1 cm thick.
  • 4. Trim the first edge, then cut 2 cm thick strips lengthwise using a ruler and knife. Create the lattice by cutting 2 cm wide strips in the other direction, creating cubes.
  • 5. Round them in the palm of your hand and place them on a baking tray lined with baking paper, spacing them apart.
  • 6. Bake in a preheated oven at 180°C (350°F) for 12 minutes. Once the cookies are golden brown, remove them from the oven and let them cool. Melt the chocolate and transfer it to a bowl. Dip the bases of the spheres into the chocolate and fold them together. Let them cool.
