Ecco la migliore ricetta per una marmellata di kumquat con zenzero, densa, profumata e con poco zucchero, perfetta per esaltare il sapore unico di questi piccoli agrumi. Grazie alla mela, che rilascia naturalmente pectina, otterrai una consistenza perfetta senza bisogno di addensanti artificiali. Ideale da spalmare su pane tostato, per accompagnare formaggi stagionati o persino come farcitura per dolci!
Ingredients
- Kumquat500 g
- Brown sugar120 g
- Water100 ml
- Ginger1 tablespoon
- Apples1 u (200 g)
- Lemon1 u (85 g)
Procedure
0. Wash the kumquats thoroughly under running water, then slice them very thinly, carefully removing the tiny seeds. Don't throw away the peel: that's where the most intense flavor lies!
1. Place the sliced kumquats in a bowl with the brown sugar, lemon juice, and grated ginger. Mix well and let sit for at least 1 hour. During this time, the citrus fruits will release their natural juices, enriching the jam's flavor.
2. Transfer everything to a large pot, add the water and the chopped apple (without peeling it, as it's rich in pectin). Bring slowly to a boil, stirring with a wooden spoon.
3. Reduce the heat and simmer for about 40-50 minutes, stirring occasionally. The apple will soften and release its natural pectin, which will make the jam thick and creamy. If you want to speed up the process, you can mash the apple pieces with a fork while cooking.
4. If you prefer a smoother jam, you can blend some of it with an immersion blender, leaving a few pieces whole for a more rustic texture.
5. To check if the jam is ready, do the saucer test: place a teaspoon of jam on a cold saucer and tilt it. If it slides slowly without being too runny, it's perfect!
6. Pour the boiling jam into sterilized jars, seal tightly, and invert to create a vacuum. Let them cool completely before storing in the pantry.
7. Storage: The jam will keep for approximately 6-8 months in a cool, dark place. After opening, store it in the refrigerator and consume within 2 weeks.
