  • 0. Dissolve the yeast in 200 ml of warm milk with a tablespoon of sugar and let it rest for 10 minutes. In a bowl (or in a stand mixer), combine the flour, 80 g of sugar, and the lemon zest. Add the milk and yeast mixture and begin kneading. Add the eggs and egg yolk, one at a time, then the softened butter cut into pieces and the salt. Continue kneading the dough until it becomes smooth and elastic. Cover with plastic wrap and let it rise in a warm place for 2-3 hours, until doubled in size.
  • 1. Heat the milk with the vanilla until just below boiling. In a bowl, whisk the egg yolks with the sugar and cornstarch. Slowly pour in the hot milk, stirring constantly. Return the mixture to the heat and cook over low heat until it becomes a thick cream. Cover with plastic wrap and let cool.
  • 2. Roll out the dough on a floured surface to about 1 cm thick and cut out 7-8 cm diameter discs. Place them on a floured baking sheet and cover with a cloth. Let them rise for another 45-60 minutes. Heat the oil to 170°C and fry the doughnuts, a few at a time, until golden brown on both sides. Drain them on paper towels and immediately roll them in granulated sugar or dust them with powdered sugar.
  • 3. Transfer the pastry cream to a piping bag with a plain nozzle. Make a small hole on one side of each donut and fill it generously with cream.
