Ecco una ricetta deliziosa per preparare delle crostatine di marmellata di albicocche con mandorle, perfette per un dolce dopo pasto o per accompagnare il tè.
Ingredients
- Type 00 flour250 g
- Jam200 g
- Butter125 g
- Powdered sugar100 g
- Almonds50 g
- Egg yolk1 u (17 g)
- Eggs1 u (60 g)
- Fine saltto taste
- Lemon zestto taste
Procedure
0. In a large bowl, combine the flour, powdered sugar, and salt. Add the cold butter and quickly work the mixture with your fingertips until it resembles sand. Make a well in the center and add the egg, egg yolk, and lemon zest.
1. Knead quickly until it forms a smooth ball. If necessary, add a tablespoon of cold water to help bind the dough. Wrap the dough in plastic wrap and let it rest in the refrigerator for at least 30 minutes.
2. Preheat the oven to 180°C. Roll out the shortcrust pastry on a lightly floured surface until about 5 mm thick. Use a round pastry cutter to cut out discs of pastry and line the previously buttered and floured tart molds.
3. Prick the bottom of the tartlets with a fork. Spread a generous layer of apricot jam on each pastry base. Sprinkle the chopped almonds over the jam. Decorate the tartlets with flaked almonds. Cover the tartlets with strips of shortcrust pastry.
4. Bake the tartlets in the preheated oven for about 20-25 minutes, or until the pastry is golden brown. Let the tartlets cool in the molds before carefully unmolding them.
