Procedure
0. Make sure the horse meat is very fresh and of high quality. Cut it first into strips and then into small cubes with a very sharp knife, continuing to pound it with the knife until it reaches a uniform but still coarse consistency. It shouldn't be too fine, like mush, but rather retain a certain texture.
1. In a bowl, combine the extra virgin olive oil, mustard, Worcestershire sauce, and a pinch of salt and pepper. Add the chopped onion or shallot, capers, chopped gherkin (if using), and parsley. Mix well until evenly emulsified.
2. Add the chopped meat to the prepared mixture, stirring gently to ensure all the ingredients are well combined, but without over-mixing the meat.
3. Use a pastry cutter or shape it by hand to create a cylindrical shape with the tartare. Arrange it on a flat plate. Make a slight indentation in the center of the tartare and carefully add the raw egg yolk. If you use quail eggs, they will be smaller and more delicate.
4. Serve with a slice of toasted rustic bread and a generous dollop of flavored mayonnaise. Serve immediately, preferably at room temperature, so the meat can release its flavors. The toasted bread adds a crunchy texture that perfectly complements the softness of the tartare.
