Procedure
0. If you're using ready-made puff pastry, unroll the sheet and cut out circles using a round pastry cutter (or a glass).
1. Take half the circles and, using a smaller cutter, cut a hole in the center of each to create rings. Place each ring over a full circle and press lightly to adhere.
2. Brush the surface of the vol-au-vents with beaten egg for a perfect golden brown finish.
3. Bake the vol-au-vents in a preheated oven at 180°C for about 15-20 minutes, until golden brown.
4. Cut the pumpkin into cubes and cook it in the oven at 180°C for about 25-30 minutes, until soft.
5. Blend: Once cooked, place the pumpkin in a blender with the olive oil, cream (if using), a pinch of salt, pepper, and nutmeg. Blend until smooth.
6. If desired, add grated cheese and honey for a balanced sweet-savory flavor. Mix well.
7. Fill the vol-au-vents: Once the vol-au-vents are ready and slightly cooled, fill them with the pumpkin cream using a teaspoon or a piping bag.
8. Garnish: Add berries to the top of each vol-au-vent for a colorful, fresh touch, as shown in the photo.
