  • 0. Place the soybeans in a large bowl and cover with plenty of water. Let them soak for at least 8-12 hours or overnight.
  • 1. After soaking, drain and rinse the beans. Rub the beans between your hands to remove the skins. This may take a little while, but is important for fermentation. Alternatively, you can also use a blender and roughly chop them.
  • 2. Bring a large pot of water to a boil. Add the soybeans and cook for about 30 minutes, until they are tender but not mushy. Drain the beans and let them cool for a few minutes.
  • 3. Dry the beans as much as possible. You can use a clean cotton cloth to absorb any excess moisture. Transfer the beans to a bowl and add the vinegar. Mix well. Add the tempeh starter and mix again, making sure it is evenly distributed among the beans.
  • 4. Divide the beans into perforated plastic bags (you can make small holes with a toothpick) or aluminum foil with holes. Spread the beans in an even layer about 1-2 cm thick. Seal the bags or wrap the aluminum foil so that the beans are well compacted.
  • 5. Place the bags in a warm place at a constant temperature of about 86-90°F. You can use an incubator, a dehydrator, or an oven with the light on. Let it ferment for 24-48 hours. During this time, the beans should develop a white mycelium that binds them together. When the tempeh is firm and covered in white mycelium, it is ready.
  • 6. Once the tempeh is ready, you can store it in the refrigerator for about a week or freeze it for later use.
  • 7. Temperature is crucial for fermentation. Make sure to maintain a constant temperature of 30-32°C. If the tempeh develops an unpleasant odor or strange colors (other than white), it is best to discard it and try again.
