- Type 00 flour150 g
- Whole wheat flour150 g
- Fresh spinach100 g
- Extra virgin olive oil60 ml
- Water60 ml
- Fine salt1 teaspoon
Procedure
0. Cook the spinach in a pan with a little water for about 2-3 minutes, until wilted. Drain well and let cool. Blend the spinach with the hot water until smooth.
1. In a large bowl, combine the flour, baking powder (if using), and salt. Add the spinach puree and olive oil to the flour mixture. Knead until smooth. If the dough is too dry, add a little water; if it's too sticky, add a little flour.
2. Cover the dough with a damp cloth and let it rest for about 20-30 minutes. This will help relax the gluten, making the dough easier to roll out.
3. Divide the dough into 5 equal-sized balls. On a lightly floured surface, roll out each ball with a rolling pin until you have a thin tortilla, about 20 cm in diameter.
4. Heat a nonstick skillet over medium-high heat. Cook each tortilla for about 1-2 minutes per side, until small bubbles form and the tortilla is lightly golden. Don't cook them too long, or they'll become tough.
5. If you're not using the tortillas right away, you can store them in a clean cloth to keep them soft or wrap them in aluminum foil and place them in an airtight plastic bag.
