Ingredients
- Water600 ml
- Manitoba flour500 g
- Remilled durum wheat semolina250 g
- Fine salt14 g
- Fresh yeast10 g
- Sesame seedsto taste
Procedure
0. In a large bowl, combine the flours. Mix well. Make a well in the center of the flour and pour in the warm water (with the dissolved yeast). Begin kneading until the dough comes together.
1. Transfer the dough to a smooth surface and knead vigorously for about 10 minutes, until smooth and elastic. Shape the dough into a ball and place it in a lightly greased bowl. Cover with a damp cloth or plastic wrap.
2. Let the dough rise in a warm, draft-free place for about 3-4 hours, or until doubled in volume.
3. After rising, take the dough. Divide the dough into equal pieces (about 8) and shape them into balls, folding them over to trap air. Arrange the balls on a baking sheet lined with parchment paper, leaving a little space between them for the second rising.
4. Cover the rolls with a damp cloth and let them rise for another 30-45 minutes.
5. Preheat the oven to 220°C. Place a baking sheet filled with water on the bottom of the oven. Before baking, you can brush the rolls with a little milk or water for a crispier, golden crust and sprinkle with sesame seeds. Bake the rolls in the preheated oven for about 15-20 minutes, or until golden brown on top.
6. Once cooked, transfer the rolls to a wire rack to cool.
