  • 0. In a large bowl, combine the flours. Mix well. Make a well in the center of the flour and pour in the warm water (with the dissolved yeast). Begin kneading until the dough comes together.
  • 1. Transfer the dough to a smooth surface and knead vigorously for about 10 minutes, until smooth and elastic. Shape the dough into a ball and place it in a lightly greased bowl. Cover with a damp cloth or plastic wrap.
  • 2. Let the dough rise in a warm, draft-free place for about 3-4 hours, or until doubled in volume.
  • 3. After rising, take the dough. Divide the dough into equal pieces (about 8) and shape them into balls, folding them over to trap air. Arrange the balls on a baking sheet lined with parchment paper, leaving a little space between them for the second rising.
  • 4. Cover the rolls with a damp cloth and let them rise for another 30-45 minutes.
  • 5. Preheat the oven to 220°C. Place a baking sheet filled with water on the bottom of the oven. Before baking, you can brush the rolls with a little milk or water for a crispier, golden crust and sprinkle with sesame seeds. Bake the rolls in the preheated oven for about 15-20 minutes, or until golden brown on top.
  • 6. Once cooked, transfer the rolls to a wire rack to cool.
