Preparare in casa una confettura di lamponi è un modo perfetto per gustare tutto il sapore di questi frutti rossi durante l’anno. Con pochi ingredienti e senza conservanti, otterrai una marmellata dalla consistenza perfetta, ideale per farcire dolci, crostate o semplicemente da spalmare sul pane. Ingredients
- Raspberry1 Kg
- Granulated sugar500 g
- Apples1 u (200 g)
- Lemonto taste
- Vanilla extractto taste
Procedure
0. Gently rinse the raspberries under running water and drain well. If using frozen fruit, let them thaw at room temperature for at least 20 minutes. If you want a seedless jam, you can quickly puree them after cooking.
1. Place the raspberries in a heavy-bottomed saucepan and add the sugar. Add the lemon juice, which will help preserve the bright color and act as a natural preservative. If using apple, grate it with the peel and add it to the mixture (it's rich in pectin, a natural thickener).
2. Cover the saucepan and let the mixture rest for 2-3 hours (or even overnight in the refrigerator). This step allows the raspberries to release their juices and blend better with the sugar.
3. Turn the heat to medium and bring the mixture to a boil. Stir occasionally to prevent sticking. Once boiling, reduce the heat and cook for about 40-50 minutes, skimming the surface occasionally with a slotted spoon.
4. If you want a thicker consistency, dissolve the agar agar in a tablespoon of water and add it in the last 5 minutes of cooking.
5. To check the correct consistency, do the saucer test: pour a drop of jam onto a cold saucer and tilt it. If it flows slowly and isn't too runny, it's ready.
6. Pour the boiling jam into sterilized jars, leaving 1 cm from the top. Close the jars with new lids and turn them upside down to create a natural vacuum. For longer shelf life, pasteurize the jars: place them in a pot with water until completely covered, bring to a boil and cook for 20 minutes.
7. ✅ Where to store it? In a cool, dark place for up to 10-12 months. Once opened, keep it refrigerated and consume within 2 weeks. ✅ More flavor? Add grated lemon zest or a spoonful of liqueur like rum or Grand Marnier. ✅ Smooth consistency? Blend the jam before bottling to remove the seeds.
