Procedure
0. Wash the plums thoroughly, pat them dry, cut them in half, and remove the stones. Cut them into small pieces to facilitate cooking.
1. In a large bowl, combine the plums, sugar, and lemon juice. Add the split vanilla pod, if desired. Cover and let steep in the refrigerator for at least 8 hours (preferably overnight). This step helps extract the natural juices and intensify the flavor.
2. Pour everything into a heavy-bottomed saucepan. Bring to a boil over medium-high heat, then reduce the heat. Cook, stirring frequently, for about 1 hour, skimming if necessary. When the jam begins to thicken, do the saucer test: place a teaspoon on a cold saucer and tilt it. If it drips slowly, it's ready.
3. Pour the boiling jam into sterilized jars, close with new lids, and turn them upside down for 10 minutes to create a vacuum. Alternatively, you can boil them in water for 20 minutes.
4. Once cooled, store the jars in a cool, dark place. After opening, refrigerate and consume within 2-3 weeks.
