Prepara le lasagne fatte in casa con sfoglia fresca, ragù saporito e besciamella cremosa. Un grande classico della cucina italiana che conquista ogni palato.
Ingredients
- Tomato puree400 ml
- Ground beef350 g
- Type 00 flour300 g
- Butter40 g
- Eggs3 u (180 g)
- Basilto taste
- Celeryto taste
- Extra virgin olive oilto taste
- White onionto taste
- Carrotsto taste
- Fine saltto taste
Procedure
0. Mix 300g of flour with 3 whole eggs and a pinch of salt until smooth and elastic. Wrap the dough in plastic wrap and let it rest for 30 minutes at room temperature. After 30 minutes, roll out the dough with a rolling pin or pasta machine until it's about 7mm thick. Keep covered with a cloth to prevent it from drying out.
1. In a large saucepan, heat a little extra virgin olive oil and sauté a mix of chopped herbs (carrot, celery, onion). Add the ground meat (beef or a combination) and brown well. Then pour in the tomato sauce, add a few fresh basil leaves, salt, and pepper. Cover and cook over low heat for about 30–40 minutes, stirring occasionally.
2. In the Thermomix, melt 40g of butter. Add 40g of flour and cook for 3 minutes at 90°C, then gradually pour in the milk (about 400–500ml) and cook until the bechamel sauce becomes smooth. Season with salt, pepper, and a pinch of nutmeg. Assemble the lasagna by alternating layers of fresh pasta, ragù, and bechamel in a greased baking dish. Bake in a preheated oven at 180°C for about 50 minutes, until golden brown.
