Il kefir è una bevanda fermentata tradizionale originaria delle regioni del Caucaso, dell'Europa orientale e della Russia. Il kefir contiene solo una piccola quantità di lattosio. Durante il processo di fermentazione, i granuli di kefir consumano gran parte del lattosio presente nel latte. Procedure
0. Make sure the milk is at room temperature.
1. Place the kefir grains (10-20 grams) in the glass jar. Add the milk to the jar and stir gently with a plastic or wooden spoon. Kefir grains can be difficult to find, so I've provided a link where you can purchase them.
2. Cover the jar with a clean cloth or a loose lid. Leave the jar at room temperature (20-25°C) for 24-48 hours.
3. After 24 hours, check the kefir. If it's thick and has a slightly sour taste, it's ready.
4. Once the kefir is ready, stir gently and then strain the kefir through a sieve into another container.
5. Kefir grains can be immediately reused to make a new batch of kefir.
6. Use fresh milk for best results. If the kefir grains grow, you can give them to friends or store them in a small amount of milk in the refrigerator. If you want to take a break, you can store the kefir grains in a jar with milk in the refrigerator for a week or two.
