Procedure
0. If present, remove any excess external fat or tough membranes with a sharp knife. Mix all the marinade ingredients and brush the caramels well. Cover with plastic wrap and refrigerate for at least 4 hours (preferably overnight). Remove the meat at least 1 hour before cooking to bring it to room temperature.
1. To achieve perfect grilled ribs, the secret is a combination of cooking methods: first, directly searing them over the coals to create that flavorful brown crust, then slowly cooking them over the indirect heat of the barbecue. Start with a high flame, where the ribs are placed bone-side down for about three minutes, then turning them on each side until a caramelized, fragrant crust forms. This is a crucial step: the flavor is concentrated here thanks to the Maillard reaction, which transforms the surface of the meat into a symphony of toasted aromas.
2. Once golden brown, move them to the open-hearth or gentle heat zone, close the lid, and let the magic of indirect cooking take its course: slowly, at a temperature of around 130–160°C, the collagen melts and the meat tenderizes, becoming juicy and flavorful. After about an hour and a half or two, you can move on to the final glaze to enhance the shine and intensify the flavor. The result? Succulent ribs, bone-in, perfect for enjoying with friends and family with greasy fingers and a satisfied smile.
3. Cut between the bones to serve individual portions. Serve with roasted potatoes, coleslaw, or creamed corn. Add a squeeze of lemon or a few drops of chimichurri sauce for a refreshing touch.
