To achieve perfect grilled ribs, the secret is a combination of cooking methods: first, directly searing them over the coals to create that flavorful brown crust, then slowly cooking them over the indirect heat of the barbecue. Start with a high flame, where the ribs are placed bone-side down for about three minutes, then turning them on each side until a caramelized, fragrant crust forms. This is a crucial step: the flavor is concentrated here thanks to the Maillard reaction, which transforms the surface of the meat into a symphony of toasted aromas.
