Ingredients
- Prawns200 g
- Lettuce150 g
- Whole wheat bread100 g
- Cluster tomato2 u (400 g)
- Garlic1 clove
- Extra virgin olive oilto taste
- Basilto taste
- Fine saltto taste
- Lemonto taste
- Black pepperto taste
Procedure
0. Pat the shrimp dry with paper towels. Season with a drizzle of oil, a pinch of salt, and pepper. Heat a grill or nonstick pan and cook the shrimp for about 1-2 minutes per side, until pink and lightly golden. Set aside to cool slightly.
1. Cut the bread into cubes or strips. In a pan with a drizzle of oil and (if you like) a crushed garlic clove, toast the bread until golden brown, turning frequently. Remove the garlic and let the bread cool on paper towels.
2. Wash the lettuce thoroughly and tear it into pieces by hand. Wash the tomatoes and cut them into cubes (or halves if using cherry tomatoes).
3. In a bowl, combine the lettuce, tomatoes, grilled shrimp, and toasted bread. Season with extra virgin olive oil, lemon juice or vinegar, salt, and pepper. Garnish with a few fresh basil or mint leaves, if desired.
4. You can also add sliced avocado, black olives, or a honey-mustard vinaigrette for a more flavorful version.
