  • 0. Pat the shrimp dry with paper towels. Season with a drizzle of oil, a pinch of salt, and pepper. Heat a grill or nonstick pan and cook the shrimp for about 1-2 minutes per side, until pink and lightly golden. Set aside to cool slightly.
  • 1. Cut the bread into cubes or strips. In a pan with a drizzle of oil and (if you like) a crushed garlic clove, toast the bread until golden brown, turning frequently. Remove the garlic and let the bread cool on paper towels.
  • 2. Wash the lettuce thoroughly and tear it into pieces by hand. Wash the tomatoes and cut them into cubes (or halves if using cherry tomatoes).
  • 3. In a bowl, combine the lettuce, tomatoes, grilled shrimp, and toasted bread. Season with extra virgin olive oil, lemon juice or vinegar, salt, and pepper. Garnish with a few fresh basil or mint leaves, if desired.
  • 4. You can also add sliced avocado, black olives, or a honey-mustard vinaigrette for a more flavorful version.
