  • 1. In a large skillet, begin cooking the guanciale over low heat, allowing it to slowly release its natural fat. Don't add oil: the guanciale is already rich in fat, which will make it crispy and flavorful without the need for additional seasoning.
  • 2. Let the guanciale crisp and golden, but be careful not to burn it. This step requires patience, but it's essential to achieve the right balance of flavor and texture! Once it's ready, set it aside.
  • 3. In a large pot, bring plenty of salted water to a boil. Cook the pasta al dente, following the cooking time indicated on the package. Don't drain it completely; reserve a little of the pasta water to bind the pasta together.
  • 4. As soon as the pasta is ready, transfer it directly to the pan with the crispy guanciale, and stir the pasta over low heat to absorb the sauce released by the guanciale. If necessary, add a little of the pasta cooking water to create a smooth, creamy sauce. It's the secret to achieving that unique creaminess!
  • 5. Turn off the heat and add the grated Pecorino Romano, stirring well until smooth and creamy. Add a generous grind of black pepper: the spiciness of the pepper and the saltiness of the pecorino are what make this pasta truly special!
