Ingredients
- Swiss chard200 g
- Eggs6 u (360 g)
- Grana Padano4 tablespoons
- Fine saltto taste
- Black pepperto taste
- Extra virgin olive oilto taste
Procedure
0. Wash the chard stalks thoroughly and cut them into pieces. Place the stalks in a food processor and chop coarsely.
1. Peel the onion and garlic clove. Finely chop the onion and garlic.
2. In a large skillet, heat the extra virgin olive oil. Add the chopped onion and garlic and sauté for a few minutes until golden. Add the chopped Swiss chard and cook over medium heat for about 15 minutes, until tender. If necessary, add a little water to prevent sticking.
3. In a bowl, beat the eggs. Add the grated Parmesan cheese, salt, and pepper, and mix well. Add the cooked Swiss chard to the beaten eggs and mix until smooth.
4. Clean the pan used for the ribs, add a little oil if necessary, and heat over medium heat. Pour the egg and rib mixture into the pan.
5. Cook the frittata for about 5-7 minutes per side, until golden brown and cooked through. You can use a plate to flip it halfway through cooking.
6. Cut the omelette into wedges and serve hot or at room temperature.
