Procedure
0. Cut the frozen salmon into thin slices. Season with lime juice, extra virgin olive oil, black pepper, and a pinch of salt. Let it rest, covered, in the refrigerator for at least 10 minutes.
1. Brush the bread slices with extra virgin olive oil and toast them in a non-stick pan or in the oven at 200°C for 5-7 minutes until golden brown.
2. Blend the spinach with pistachios, Parmesan, extra virgin olive oil, garlic (if desired), salt, and pepper until smooth. Add a little water if necessary.
3. Spread a generous amount of pesto on each slice of bread. Arrange a few slices of marinated salmon on top. Add grated lime zest, a few drops of fresh juice, and a sprinkle of sesame seeds.
