  • 0. Make the gourmet pesto. In a blender, combine the washed basil, drained sun-dried tomatoes, pine nuts, Parmesan cheese, balsamic vinegar, oil, and garlic, if using. Blend until smooth and velvety. Taste and season with salt. If possible, refrigerate for 30 minutes to enhance the aroma.
  • 1. Wash the beefsteak tomatoes and slice them into thick, even slices. Cut the mozzarella only at the last minute to prevent it from releasing too much water.
  • 2. Alternate tomato and mozzarella slices on a flat plate, or arrange vertically like a millefeuille for a dramatic effect. Season with a drizzle of extra virgin olive oil, a pinch of flaky salt, and freshly ground pepper.
  • 3. Spread a few teaspoons of pesto over the mozzarella, in spirals or artistic drops. For a finishing touch, garnish with fresh basil leaves and a few drops of balsamic reduction.
  • 4. Serve with toasted bread, Apulian taralli, or artisanal breadsticks.
