Ingredients
- Beef broth1.5 L
- Priest's hat800 g
- Golden onion500 g
- Red wine120 ml
- Extra virgin olive oil80 ml
- Butter50 g
- Tomato paste20 g
- Juniper (berries)6 berries
- Bay leaf2 leaves
- Cuminto taste
- Sweet paprikato taste
- Type 00 flourto taste
- Fine saltto taste
- Black pepperto taste
- Rosemaryto taste
Procedure
0. First, melt 50g of butter with 40g of oil in a saucepan. Then add the crushed juniper berries and heat through. Finally, finely chop the onions and add them, reduce the heat, and cook, covered, for 10-15 minutes. Then, dice the meat, coat them in flour, and brown them in another pan with the remaining 40g of oil for a couple of minutes per side.
1. Next, add the meat to the saucepan along with the onions, bring to a simmer, and deglaze with the red wine. Pour in a ladle of boiling broth along with the sauce from the pan. Heat over high heat and, stirring by hand, add the paprika powder, the whole bunch of rosemary, the sage, the bay leaf, the cumin, the tomato paste, and the rest of the hot broth.
2. Finally, cover with a lid and cook over low heat for about 3 hours, stirring occasionally; the meat should not fall apart or fray.

3. Let the meat rest for 1 hour in its liquid with the heat off.
