Dolce, salato, cremoso e croccante: questa pizza gorgonzola e pere è un’esplosione di contrasti! L’impasto, con 4 ore di #lievitazione e farina manitoba, è leggero e fragrante. La dolcezza della pera si fonde con l’intensità del gorgonzola, mentre le noci aggiungono croccantezza e un filo di miele finale chiude il cerchio con eleganza.   • 0. Dissolve the yeast and sugar in the warm water. Let it rest for 5 minutes. Place the Manitoba flour in a large bowl, then pour in the water with the yeast and begin kneading. Add the salt and finally the oil, continuing to knead until the dough is smooth and elastic (about 10 minutes by hand or 6-7 with a mixer).
  • 1. Cover and let rise in a warm place for 3 hours. After the first rise, divide the dough into 2 balls, cover, and let rise for another hour.
  • 2. Preheat the oven to maximum (250°C static or 230°C fan-assisted) with the baking sheet/baking stone inside. Roll out the balls on a floured surface until you obtain two discs.
  • 3. Arrange the mozzarella pieces on top, followed by the thinly sliced pears (with or without the skin), the Gorgonzola flakes, and the walnuts, if using. Bake for about 8-10 minutes (depending on your oven) until the edges are golden brown. Remove from the oven and drizzle with honey (optional) and sprinkle with black pepper.
  • 4. Tip: If you have a 220°C oven, baking may take up to 17 minutes (depending on the thickness). If you don't have a baking stone, you can use this technique: bake the first 5 minutes, placing the pan directly on the bottom of the oven. The result will be similar!
