Ingredients
- Gluten-free flour mix450 g
- Semi-skimmed milk230 ml
- Granulated sugar70 g
- Butter50 g
- Fresh yeast6 g
- Eggs3 u (180 g)
- Lemon zestto taste
- Fine saltto taste
Procedure
0. In a bowl, combine the milk, yeast, and sugar. Then add the flour and mix vigorously. Once fully incorporated, add the eggs one at a time and the grated lemon zest. Mix the ingredients together, then finally add the diced butter and salt. Stir in the flour as well.
1. Let the dough rest for about twenty minutes. Meanwhile, butter a loaf pan. Divide the dough into three equal portions and shape them into balls, placing them inside the pan. Cover with plastic wrap and let it rest in a warm place for about four hours, or until it has more than doubled in size.
2. Preheat the oven to 190°C and place a baking sheet filled with water on the bottom. This will create a humid environment that will allow the dough to rise. Bake for about 30 minutes. Then remove the baking sheet and bake for another 10 minutes. Let cool before cutting.
