Ingredients
- Bell pepper500 g
- Red onion350 g
- Celery350 g
- Carrots350 g
- Cauliflower350 g
- White wine vinegar50 ml
- Black pepperto taste
- Fine saltto taste
- Waterto taste
Procedure
0. To prepare the giardiniera, start by washing and drying all the vegetables thoroughly. Using a knife, dice the celery; then, separate the cauliflower florets; and finally, cut the onions into wedges.
1. Cut the peppers into medium-sized slices, then chop the carrots. Once you've finished cleaning and chopping all the vegetables, start filling the previously sterilized 500 ml jars, alternating the vegetables as desired, trying to avoid leaving any gaps between each vegetable. Stop with the vegetable layer about an inch from the top.
2. Once you've filled them all, add a teaspoon of fine salt, a handful of white pepper, and 50 ml of wine vinegar to each jar. Cover the vegetables with water and close the jars, making sure to leave about 2 centimeters between the lid and the food. Place a dishcloth on the bottom of a saucepan and then place the filled jars inside.
3. Fill the jars with water, cover them with a cloth, and bring to a boil. Simmer for about 40 minutes. Let cool and invert the jars. Check that the vacuum has formed.
4. Serve plain or season the giardiniera with extra virgin olive oil.
