Ingredients
- Ground beef200 g
- Durum wheat pasta180 g
- White wine100 ml
- Walnuts30 g
- Carrots2 u (150 g)
- Celery1 undefined
- White onion1 u (150 g)
- Vegetable brothto taste
- Extra virgin olive oilto taste
- Rosemaryto taste
- Fine saltto taste
- Black pepperto taste
- Parmigiano Reggiano DOPto taste
Procedure
0. Chop the soffritto: • Finely chop the carrots, celery, and onion. • Heat a drizzle of oil in a saucepan and gently sauté the chopped vegetables for 8-10 minutes.
1. Add the meat: • Add the minced meat and brown it well over medium heat, breaking it up with a spoon. • When it has changed color, deglaze with white wine and let it evaporate.
2. Cook the white ragù: • Add a ladle of hot broth, a sprig of rosemary or thyme if desired, and cover. • Let it cook over low heat for 30-40 minutes, adding more broth if necessary. • Season with salt and pepper.
3. Toast and chop the walnuts: • In a non-stick pan, lightly toast the walnuts and chop them coarsely with a knife.
4. Cook the pasta: • Cook the fusilloni in plenty of salted water and drain them al dente, keeping a little of the cooking water.
5. Stir and serve: • Toss the fusilloni in the ragù with a ladle of the cooking water. • Add the chopped walnuts, a drizzle of raw oil, and a sprinkling of Parmesan cheese, if desired.
