  • 0. Peel or wash the potatoes thoroughly (you can leave the skin on if it's thin and clean). Cut them into wedges or even sticks. Place the potatoes in a bowl of cold water and let them soak for 15–30 minutes to release the starch. Then drain and dry them thoroughly with a clean cloth.
  • 1. Toss them in a bowl with oil, salt, pepper, paprika, garlic powder, and rosemary. Toss well to distribute the seasoning. Bake in a single layer (or in a stirring basket) at 200°C for 20–25 minutes, shaking or turning the potatoes every 8–10 minutes, until golden and crispy on the outside and soft on the inside.
  • 2. Pat the sea bass fillets dry with paper towels. In a dish, mix the breadcrumbs with parsley, lemon zest, a pinch of salt, and pepper. Brush the fillets with extra virgin olive oil, covering the flesh side only (not the skin). Coat the fillets in the breadcrumbs, pressing firmly to adhere. Bake at 200°C (390°F) for 15-20 minutes. There's no need to turn them. The fish is cooked when the flesh is white and tender, and the breading is golden brown.
