Ingredients
- Powdered sugar175 g
- Butter150 g
- Almonds150 g
- Egg white140 g
- Type 00 flour50 g
Procedure
0. Melt the butter in a saucepan over medium heat until it begins to foam. Continue cooking for 4-5 minutes until small bubbles begin to appear—the butter should be golden brown and have a nutty aroma. Remove from the heat and set aside to cool slightly.
1. Combine the powdered sugar, almonds, and flour in a large bowl. Gently fold in the egg whites, then gradually incorporate the butter until smooth. Cover and refrigerate for 1 hour.
2. Preheat oven to 200°C. Lightly grease a 12-square silicone baking pan and place it on a flat baking sheet. Carefully pour the batter into the pans, then use a flat knife to scrape off the excess batter from the top. Sprinkle the flaked almonds on top and bake for 16-18 minutes, until firm to the touch and golden.
3. Let cool for 10 minutes before carefully turning out onto a wire rack to cool completely. Sift over a little powdered sugar to serve.
