Ingredients
- Water500 ml
- Mustard seeds15 g
- Cucumber6 u (1500 g)
- Garlic4 cloves
- Bay leaf4 leaves
- Red onion1 u (150 g)
- Bell pepper1 u (220 g)
- Fine salt1 tablespoon
- Dillto taste
Procedure
0. Sterilize the jar in boiling water.
1. Prepare the brine: dissolve the salt (not iodized) in hot water and let it cool completely.
2. Arrange the ingredients in the jar: start with the garlic, bay leaves, mustard seeds and dill, then insert the cucumbers vertically, the peppers cut into cubes and the onion chopped thinly and compactly.
3. Pour the cold brine until all the ingredients are covered.
4. Place a weight (like a cork or cabbage leaf) on top to keep everything submerged.
5. Close with gauze or a non-hermetic cap and leave to ferment at room temperature (18–22°C) for 3–5 days.
6. Once it has reached the desired flavor, store it in the refrigerator: it will last for several weeks.
