  • 0. Start by cleaning the fennel and slicing it finely. Also cut the carrot into julienne strips and the potato into small cubes.
  • 1. In a saucepan, heat the olive oil and add the chopped onion. Sauté over medium heat until translucent.
  • 2. Add the fennel, carrot, and potato to the pot. Cook for about 5 minutes, stirring occasionally, until the vegetables begin to soften.
  • 3. Pour the vegetable broth into the pot, cover and cook for about 20 minutes, or until the vegetables are tender.
  • 4. Add fresh orange juice and a little grated zest for a more intense flavor. Add dill and fennel seeds, too, if you want a more pronounced aroma.
  • 5. If you prefer a creamier consistency, you can blend part of the soup with an immersion blender.
  • 6. Serve the soup hot, garnished with a little grated orange zest and a sprig of fresh dill. You can also serve it with slices of toasted bread.
  • 7. For an extra touch, you can add a drizzle of olive oil just before serving. If you like contrast, a sprinkling of freshly ground black pepper will enhance the fresh, citrusy flavor of the orange.
