Nella cucina brasiliana è probabilmente il piatto più noto e rappresentativo. Si tratta di una zuppa di fagioli neri con diversi tagli di maiale.
Ingredients
- Black beans (dried)500 g
- Pork ribs500 g
- Golden onion250 g
- Fresh sausage250 g
- Raw bacon200 g
- Spicy salami150 g
- Bay leaf5 leaves
- Garlic2 cloves
- Fine saltto taste
- Bouillon cubeto taste
- Corianderto taste
Procedure
0. The first step is to soak the beans the night before. This way, they'll be soft when cooked.
1. We then cut the sausage and salami into cubes and brown them in a large pan so that they release their fat.
2. In another pan, brown the pancetta and ribs. Meanwhile, in a large pot, sauté the onion and garlic with a drizzle of oil.
3. Add the browned meat to the pan with the onion and cook for a few minutes. Then add the drained beans and spices, and cover with water. At this stage, you can add 5-6 bay leaves, which will give the fejioada its characteristic flavor.
4. Cook over low heat for about 4 hours, covered, keeping the water level constant. After half an hour, you can increase the heat and remove the lid to reduce the broth.
5. Serve the fejioada hot with basmati rice!
