  • 0. Break the dark chocolate into small pieces and set aside. In a saucepan, combine the cocoa powder, cornstarch, sugar, and salt. Gradually add the milk and cream, stirring constantly to avoid lumps.
  • 1. Bring the mixture to a boil over medium heat, stirring constantly until it begins to heat. Add the dark chocolate to the saucepan and continue stirring until the chocolate has completely melted and the mixture begins to thicken.
  • 2. In a separate bowl, lightly whisk the eggs with the vanilla extract. Remove a little of the warm chocolate mixture and slowly add it to the beaten eggs, stirring constantly to temper the eggs without cooking them. Pour the egg and chocolate mixture into the saucepan with the remaining chocolate mixture.
  • 3. Cook everything over medium-low heat, stirring constantly, until the pudding thickens (about 5-7 minutes). Do not let the mixture boil to prevent the eggs from curdling too much and to maintain its porosity.
  • 4. Pour the pudding through a fine sieve into a large bowl to remove any lumps. Pour the pudding into individual glasses or bowls. Let cool at room temperature for about 20 minutes, then cover with plastic wrap and chill in the refrigerator for at least 4 hours.
