Le melanzane ripiene di quinoa e verdure sono un piatto sano, leggero e ricco di fibre, perfetto per un pranzo o una cena vegetariana dal sapore mediterraneo.
Ingredients
- Parmigiano Reggiano DOP50 g
- Dried quinoa50 g
- Pine nuts5 g
- Eggplants2 u (500 g)
- Bell pepper1 u (220 g)
- Cluster tomato1 u (200 g)
- Garlic1 clove
- Zucchini1 u (200 g)
- White onion1 u (150 g)
- Black pepperto taste
- Extra virgin olive oilto taste
- Fine saltto taste
Procedure
0. Preheat the oven to 200°C. Cut the eggplants in half lengthwise and carefully scoop out the flesh with a spoon, leaving about ½ centimeter thick. Set aside the eggplant pulp.
1. In a pot, bring two cups of water to a boil and add the uncooked quinoa. Cover and cook for about 15-20 minutes, or until the quinoa is cooked and the water is absorbed. In a pan, heat a little olive oil and sauté the onion and garlic until golden.
2. Add the chopped eggplant, bell pepper, zucchini, and tomato. Cook for about 5-7 minutes, or until the vegetables are tender. Add the cooked quinoa and pine nuts and mix well. Season with salt and pepper to taste.
3. Stuff the eggplant halves with the quinoa and vegetable mixture. Sprinkle the grated cheese over the stuffed eggplant.
4. Arrange the stuffed eggplants on a lightly oiled baking sheet. Cover the pan with foil and bake for about 25-30 minutes.
5. Remove the foil and bake for another 10 minutes, or until the cheese is golden brown and the eggplant is tender. Serve hot and enjoy your baked eggplant stuffed with quinoa and pine nuts! Enjoy!
