  • 0. Wash the eggplant and cut it into thin slices lengthwise (about 0.5 cm). Grill the slices on a hot griddle with a drizzle of oil for about 2-3 minutes per side, until soft and lightly golden. Once cooked, let them cool.
  • 1. In a bowl, combine the ricotta, grated Parmesan, a pinch of salt, pepper, and a few torn basil leaves. For a more flavorful filling, you can also add some diced mozzarella.
  • 2. Take a slice of grilled eggplant and spread a small amount of ricotta filling over the surface. Add a cube of mozzarella to the center. Gently roll the eggplant slice up into a roulade. Repeat with all the eggplant slices.
  • 3. In a pan, heat a drizzle of oil and sauté the garlic until golden. Add the tomato sauce, a pinch of salt, and cook over low heat for about 10 minutes. Add a few basil leaves at the end.
  • 4. Pour a little tomato sauce into the bottom of a baking dish. Arrange the eggplant rolls on top, then cover with the remaining tomato sauce. Sprinkle the top with more mozzarella and parmesan, and, if you like, a little breadcrumbs for a crispy crust.
  • 5. Bake at 180°C for about 20-25 minutes, or until the surface is golden and the cheese is completely melted.
  • 6. Remove the rolls from the oven and decorate them with a few fresh basil leaves before serving them hot.
