- Eggplants700 g
- Bresaola IGP150 g
- Breadcrumbs100 g
- Mozzarella100 g
- Eggs2 u (120 g)
- Peanut oilto taste

Procedure
0. Peel the round eggplants and cut them into large, round slices. Soak them in a bowl of water and wait at least five minutes until they release their bitter flavor.
1. Beat the two eggs with a fork in a dish and dip the dried eggplant slices on both sides. Immediately coat them in the gluten-free brown rice and corn breading.
2. Finally, fry them in a pan with peanut oil. Arrange them on a plate and, while they're still hot, arrange the bresaola slices and mozzarella between the eggplant slices.
