Il Dulce de Leche è una delle delizie più amate dell'America Latina, una #crema spalmabile dolce, densa e vellutata, perfetta per farcire dolci, accompagnare il caffè o semplicemente mangiare a cucchiaiate. 😋 La sua preparazione richiede pazienza e tecnica, ma con i giusti accorgimenti otterrai un risultato liscio, setoso e con il perfetto equilibrio tra dolcezza e cremosità.
Ingredients
- Whole milk1 L
- Granulated sugar300 g
- Baking soda1 teaspoon
- Vanilla extract1 teaspoon
- Fine saltto taste
Procedure
0. Pour the milk into a heavy-bottomed saucepan. Add the sugar and stir until completely dissolved. Stir in the baking soda (be careful: it will foam a little, which is normal). If using a vanilla bean, split it open and add the seeds and pod.
1. Medium-low heat: Bring the mixture almost to a boil, then reduce the heat to low. It should simmer gently, never boil. Stir every 5-10 minutes: initially, you don't need to keep stirring constantly, but the thicker it gets, the more you'll need to stir frequently to prevent it from sticking. After about an hour, you'll notice the milk starting to reduce and turn golden brown.
2. After 1.5 hours: The mixture will be much darker and thicker. Stir constantly: from now on, the risk of sticking increases! Use a wooden spoon or silicone spatula. Drop test: Place a drop on a small plate and let it cool for 1 minute. If it slides slowly and is thick, it's ready! If it's too runny, cook for another 10-15 minutes.
3. Sift (optional): If you want a super smooth dulce de leche, pass it through a fine-mesh strainer. Cool to room temperature: the dulce de leche will thicken as it cools. Transfer to a sterilized glass jar and store in the refrigerator (lasting about 3 weeks).
4. 🔥 For an even richer flavor: ✅ Use brown sugar: Adds more intense caramel notes. ✅ Add a spoonful of glucose or honey: Prevents crystallization. ✅ Butter at the end (optional): A teaspoon of butter off the heat makes the texture even more velvety.
5. ❌ Mistakes to avoid 🚫 Too high a flame: It will burn on the bottom and give off a bitter taste. 🚫 Not stirring enough: You risk lumps and excessive caramelization. 🚫 Removing it from the heat too soon: It will thicken further as it cools, but if it's too runny, you won't get the typical creamy consistency.
