  • 0. In a bowl, whip the fresh cream until it reaches a soft consistency.
  • 1. In another bowl, mix the mascarpone with the icing sugar and vanilla until smooth.
  • 2. Gently fold the whipped cream into the mascarpone cream, stirring with a spatula to avoid deflating it.
  • 3. Store in the refrigerator while you prepare the rest.
  • 4. Clean the pumpkin, removing the peel and seeds, and dice it. Cook the pumpkin cubes in a pot with a little water until tender (about 15 minutes).
  • 5. Drain the pumpkin and transfer it to a blender. Add the brown sugar, cinnamon, ginger, nutmeg, and orange juice. Blend until smooth. Let cool.
  • 6. Preheat the oven to 180°C. In a bowl, combine the hazelnut flour, brown sugar, and a pinch of salt. Add the cold, cubed butter and rub the mixture with your fingertips until crumbly.
  • 7. Add chopped hazelnuts for an extra touch of crunch. Spread the crumble on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until golden and crispy. Let cool.
  • 8. Take the glasses and spread a layer of mascarpone cream on the bottom. Add a layer of spiced pumpkin puree. Finish with a generous layer of crunchy crumble.
