  • 0. Rinse the rice in cold water until the water runs clear. Let it soak for 20 minutes, then drain. Place it in a pot with 200 ml of water, cover, and bring to a boil. Reduce the heat and cook for 10 minutes without lifting the lid.
  • 1. Turn off the heat and let it rest for another 10 minutes, covered. In a small bowl, dissolve the sugar and salt in the rice vinegar. Pour the dressing over the rice, stir gently, and let it cool.
  • 2. Spread a sheet of nori seaweed on a sushi mat (makisu). Spread the cooled rice on the nori, leaving about 1 cm of free space. Arrange the salmon, cream cheese, avocado, and spring onion in the center. Roll everything up with the mat, pressing firmly to form a compact roll.
  • 3. Make a batter by mixing the egg, cold sparkling water, and rice flour. Pour the panko into a shallow dish. Dip the roll first in the batter and then in the panko, coating it well.
  • 4. Heat the oil to 170°C and fry the roll for about 1 minute, until golden brown. Drain on paper towels and let rest for 1-2 minutes.
  • 5. Use a sharp, slightly dampened knife to cut the roll into 6-8 pieces. Serve with teriyaki sauce, spicy mayonnaise, or soy sauce.
