  • 0. Blanch the spinach for 1 minute in salted water, then immediately cool it in ice water. Drain well and blend it with the water until smooth. In a bowl, combine the flour, starch, salt, and oil. Pour in the spinach cream and blend until you have a soft but firm dough.
  • 1. Roll out the dough very thinly with a rolling pin between two sheets of parchment paper. Cut out 8 cm diameter discs. Bake in a preheated oven at 180°C (350°F) for 10-12 minutes. Once cooled, the wafer will be crispy and stable, yet still edible and won't break when bitten into.
  • 2. Cut the fish into small, even cubes. Place in a bowl with the lime juice, cover, and let marinate for 10-12 minutes in the refrigerator. Drain the fish lightly and add the shallots, cucumber, cilantro, chili pepper, and a drizzle of olive oil. Season with salt immediately.
  • 3. Place the ceviche in the center of each crispy wafer. Garnish with cilantro leaves, thin lime slices, or edible flower petals for a dramatic effect.
