Procedure
0. Peel the potatoes, cut them into chunks, and boil them in salted water. This will take about 15 minutes (depending on their size).
1. Drain the potatoes and let them cool. Mash them and add the egg, salt, minced garlic clove, parsley, and Parmesan cheese.
2. Mix well until smooth. Wet your hands with oil and form the fritters, quickly dredging them in flour. Once ready, fry them in a little oil (do not immerse them). Serve hot!
