  • 2. Heat the crepe pan (alternatively, a large nonstick pan will work fine) and spread a light layer of butter. Using a ladle, pour the batter into the pan, creating a thin layer, spreading it evenly across the entire pan.
  • 3. When the dough begins to separate, flip it over. Then, add the cheese and ham. After about a minute, add the arugula and roll the crepe.
