- Semi-skimmed milk500 ml
- Type 00 flour250 g
- High-quality cooked ham200 g
- Cheese150 g
- Arugula125 g
- Butter40 g
- Eggs3 u (180 g)
Procedure
0. In a large bowl, crack the eggs and beat them with a whisk. Add the milk and melted butter. Stir vigorously with a whisk to incorporate any air.
1. Add the flour (preferably sifted) and mix again. If you have time, let the dough rest for half an hour.
2. Heat the crepe pan (alternatively, a large nonstick pan will work fine) and spread a light layer of butter. Using a ladle, pour the batter into the pan, creating a thin layer, spreading it evenly across the entire pan.
3. When the dough begins to separate, flip it over. Then, add the cheese and ham. After about a minute, add the arugula and roll the crepe.
