Il baccalà mantecato è una specialità veneta cremosa e saporita, preparata con stoccafisso, olio extravergine e aglio. Perfetto da spalmare su crostini per un antipasto elegante e tradizionale.

Procedure
0. The soaking time for cod depends on its thickness and saltiness. Typically, cod requires soaking for at least 24-48 hours, changing the water at least 3-4 times during this time to remove excess salt and reduce its saltiness. Once soaked, the cod is ready to use in the recipe.
1. Cut the cod into pieces and place in a pot with the milk and garlic cloves. Cook over medium heat until the cod is tender, about 15-20 minutes.
2. Drain and remove any bones and skin. Place the cod in a bowl and begin mashing it with a fork or an immersion blender until it reaches a creamy consistency.
3. Gradually add the extra virgin olive oil until you reach the desired consistency. Season with salt and pepper. Serve the creamed cod spread on toasted bread croutons and garnish with chopped fresh parsley, if desired.
