  • 0. Preheat the oven to 200°C. Wash the peppers, onion, and chili pepper thoroughly. Halve or quarter the onion and arrange all the vegetables (peppers, onion, and chili pepper) on a baking sheet lined with parchment paper.
  • 1. Season the vegetables with 2 tablespoons of olive oil, salt, and pepper. If desired, you can also add a pinch of smoked paprika.
  • 2. Bake the vegetables for 25-30 minutes, or until the peppers and onion are well browned and lightly charred around the edges.
  • 3. While the vegetables are cooking, boil the potatoes in salted water until soft (about 10-15 minutes).
  • 4. Once the vegetables are cooked through, remove them from the oven and let them cool slightly. If you prefer, you can peel the peppers for a smoother texture, but you can also leave them on.
  • 5. Add the roasted vegetables and raw garlic to a blender or food processor along with the boiled potato. Add 1 tablespoon of extra olive oil and blend until creamy and thick.
  • 6. Season with salt and pepper and, if desired, add more smoked paprika for a more intense flavor.
  • 7. Pour the cream into a bowl and garnish with fresh herbs like basil or parsley. You can serve this thick cream as a dip for crostini, with pasta, or as a side dish for main courses.
