Vellutata di zucchine cremosa e leggera, ideale per un pasto sano e veloce. Perfetta da gustare calda o tiepida in ogni stagione.
Ingredients
- Zucchini800 g
- Vegetable broth250 ml
- Golden onion150 g
- Fresh cream50 ml
- Extra virgin olive oilto taste
- Black pepperto taste
- Parsleyto taste
- Fine saltto taste
Procedure
0. Wash the courgettes, trim them and cut them into rounds. Peel the onion and cut it into fairly large pieces.
1. Pour a drizzle of oil into a high-sided saucepan and add the onion. Add the courgettes and brown for a few moments over a high flame, stirring with a wooden spoon to prevent them from sticking.
2. Cover the vegetables with boiling vegetable stock and season with salt and pepper. Cook over low heat for about 25 minutes, adding more stock if it reduces too much.
3. Once cooked, add a sprig of fresh parsley and blend everything with an immersion blender.
4. Until you get a smooth and homogeneous consistency. Add the fresh cream to the cream 8, put it back on the heat and let it cook for about 5 minutes on a low flame.
