  • 0. Wash the peppers and cherry tomatoes. Dry them thoroughly. Cut the peppers in half, remove the seeds and white membranes. Leave the cherry tomatoes whole (if very large, cut them in half). Peel the onion and cut it into quarters (if using). Leave the garlic whole with its peel (“in camicia”).
  • 1. Arrange all the vegetables in the basket (in two batches if necessary), with: • A drizzle of oil • The chilli pepper (whole or chopped) • A pinch of salt, pepper and paprika
  • 2. Cook at 200°C for 15-18 minutes, shaking halfway through, until: • The peppers are charred but still soft • The cherry tomatoes have wrinkled skin and are starting to caramelise • The garlic is soft inside
  • 3. Peel the garlic and place it in a blender along with: • Roasted peppers and cherry tomatoes • Cooked onion • 2 tablespoons of extra virgin olive oil • Apple cider vinegar or lemon juice • Fresh basil • (Optional) soaked almonds or cashews Blend until smooth. Taste and adjust the seasoning for salt and pepper.
  • 4. You can pass the cream through a sieve for an ultra-silky consistency, or leave it plain. Pour it into sterilized jars if you want to store it for 3-4 days in the refrigerator (covered with a drizzle of oil).
