  • 0. Clean the leek and slice it thinly. Wash the potatoes thoroughly and dice them. Then, prepare the broccoli: wash it, remove the stems, and divide it into florets.
  • 1. Heat the extra virgin olive oil in a large pan and sauté the leeks over low heat until soft. After about 10 minutes, add the potatoes and broccoli, sauté for a few minutes, then add the water and salt, cover, and cook over low heat for about 20 minutes.
  • 2. Once the vegetables are cooked, puree them with an immersion blender. Plate, garnish with a few thyme leaves, and serve with croutons or slices of toasted bread.
