- Vegetable broth600 ml
- Broccoli400 g
- Yellow potatoes300 g
- Leek250 g
- Thymeto taste
- Fine saltto taste
- Black pepperto taste
Procedure
0. Clean the leek and slice it thinly. Wash the potatoes thoroughly and dice them. Then, prepare the broccoli: wash it, remove the stems, and divide it into florets.
1. Heat the extra virgin olive oil in a large pan and sauté the leeks over low heat until soft. After about 10 minutes, add the potatoes and broccoli, sauté for a few minutes, then add the water and salt, cover, and cook over low heat for about 20 minutes.
2. Once the vegetables are cooked, puree them with an immersion blender. Plate, garnish with a few thyme leaves, and serve with croutons or slices of toasted bread.
