Il cornbread è il pane di mais per eccellenza della cucina americana, soffice dentro e leggermente croccante fuori. È perfetto per accompagnare un piatto di chili, BBQ ribs o semplicemente con un filo di burro fuso e miele. Mix the wet ingredients: In another bowl, whisk the eggs, milk, melted butter (or oil), and honey until smooth. Combine the two mixtures: Pour the wet ingredients into the bowl with the dry ingredients and gently fold together with a spatula. Don't overwork the dough; it should remain slightly lumpy to ensure a soft texture.
  • 1. Grease a 20-22 cm baking pan with butter or oil. Pour the batter in and smooth the surface. Bake at 200°C (400°F) for 20-25 minutes, until golden brown and a toothpick inserted into the center comes out clean.
  • 2. Once baked, brush the top with a little melted butter for an extra-soft finish. Serve warm or hot, perhaps with a drizzle of honey or maple syrup. It's also delicious with a little salted butter melted on top... a real treat! 🤤

Stir in 80g sweetcorn kernels (fresh or well-drained canned) for a more interesting texture. 🥜 Southern Cornbread: Replace the butter with lard for an authentic, rustic taste.
  • 4. Tricks of the trade for perfect cornbread: ✅ Don't overmix the dough: the cornbread should remain slightly rustic. If you overmix it, it will become rubbery. ✅ Use a cast iron skillet if possible: it retains heat evenly and creates a spectacular crust. ✅ Want more moisture? Add buttermilk (or make a homemade version by mixing 250 ml of milk with 1 tablespoon of lemon juice and letting it sit for 10 minutes). ✅ Want a crispy crust? Pour the batter into the preheated pan before baking.
