Un liquore molto aromatico da abbinare ad un dolce a base di cioccolato o da consumare a fine pasto.
Ingredients
- Water500 ml
- Coffee500 ml
- Food grade alcohol500 ml
- Granulated sugar250 g
- Vanilla essenceto taste
Procedure
0. Prepare 500 ml of strong coffee using ground coffee and let it cool.
1. In a large glass jar, add the pure alcohol, cooled coffee, and vanilla bean or essence (if using). Close the jar and let it steep in a cool, dark place for at least 10 days, shaking lightly every day.
2. In a saucepan, bring the water to a boil and add the sugar. Stir until the sugar has completely dissolved and let cool.
3. Strain the macerated liquid through a coffee filter or cheesecloth to remove any coffee and vanilla residue. Add the sugar syrup to the strained liquid and stir well.
4. Transfer the liqueur to clean glass bottles and let it rest in a cool, dark place for at least a month before drinking. This will allow the flavors to meld and develop.

6. During maceration, the aromatic and soluble compounds in coffee are extracted into the alcohol. Alcohol acts as an efficient solvent due to its polarity and ability to break hydrogen bonds in coffee's organic compounds.

9. During maturation, volatile compounds and aromas blend better, enhancing the liqueur's flavor profile. The alcohol continues to extract and solubilize the remaining aromatic compounds over time, creating a more harmonious liqueur.
